About the information day

The information day is designed for food companies interested in recent research findings related to processing contaminants such as acrylamide, furan, hydroxymethylfurfural (HMF) or 3-monochloropropane-1,2-diol (3-MCPD) esters. Those compounds are naturally formed during thermal processing of many foods such as baking, roasting, frying, canning, retorting or sterilization.
Participants will discover how new technologies can help them to mitigate the formation of such contaminants. They will also have the opportunity to discuss with technology providers how to implement monitoring system and to optimize their processes.

About PROMETHEUS

PROMETHEUS is a European consortium of partners from academia, research and technological centers and industry which are leading the investigation on mitigation strategies of process contaminants. PROMETHEUS has the objective to help the European food industry to reduce consumer exposure to undesirable compounds formed during food processing without affecting food quality or reducing microbiological safety. Several food processing technologies have been investigated: vacuum baking, high hydrostatic pressure treatment, ohmic heating and microencapsulation of heat-labile ingredients. In addition, in-line analytical techniques have been developed to monitor the formation of such undesirable food-born compounds.

HOW TO GET THERE

VENUE

The venue is 2 minutes walking distance from the "Metropolitano" Metro station (Line 6). Take "Gregorio del Amo" exit and go down the street. Get into the CSIC-Complutense Campus and go directly to the main entrance at CENIM. Meeting venue is at the first floor.

  • From the Madrid-Barajas airport (approx. 40 min)
    - By Metro: Take Metro Line 8 (pink colour) at the Madrid-Barajas airport (T1, T2, T3, or T4) direction to "Nuevos Ministerios". Stop at "Nuevos Ministerios" station, and change to Line 6 to "Metropolitano" station.
    - By Bus: Take Line 200 (Madrid-Barajas airport to Av. de America). Stop at "Avenida de America" and get into the Metro Line 6 to "Metropolitano" station.
    - By Taxi: it highly depends on the traffic conditions (20 – 60 min).

  • From the Madrid-Atocha railway AVE station (approx. 40 min)

Connect to the Atocha Cercanias Train station area. Take any train for C1/C2/C3/C4 or C10 lines direction to "Nuevos Ministerios". Stop at "Nuevos Ministerios" station, and change to Line 6 to "Metropolitano" station.
